Mexican Hot Chocolate Cake Pops


So if you want a tutorial on cake pops see my Holiday Cake Pops post from a while back. I just wanted to share some pictures from the cake pops that me and my co-worker, Rae Ann, and her son (who is in the 3rd grade) made for Valentine's Day. We created a bomb new flavor combo that we deemed Mexican Hot Chocolate. It was basically chocolate fudge cake mix with ground up Abuelita's Mexican Chocolate and cinnamon. The frosting that we mixed with the cake was chocolate fudge with more ground up Abuelita's Mexican Chocolate. These were AMAZING! :) Since we were making some for our co-workers and her son's 3rd grade class we made 2 types of cake pops. The second flavor was red velvet (of course) for Valentine's Day. (You can see my holiday cake pops post for the exact ingredients we used.)

This sounds delicious! I love Mexican hot chocolate. When my sisters and I were younger, we'd grind up the Abuelita in this random mortar & pestle my parents had and then stick our fingers in it and lick it off. Oh to be young again!

Did you use the liquid Abuelita or the solid stuff? And what kinds of measurements did you use to make them? I'm a measurement kind of girl sometimes and if you have them, I'd love them! :)

Hey Grace! I loved eating just gnawing on a wedge of Abuelitas when I was younger. :) So I used about 1 round block of Abuelita chocolate ground up finely (almost a powder). I added about 2/3 of it to the batter (just a simple Devil Food's box mix) along with 1 & 1/2 tablespoons of cinnamon. It smelled soooo good in the oven. Then for the frosting that I mixed it with, it was just a simple chocolate fudge container of frosting and then I added the other third of ground up Abuelita. :) (No cinnamon this time) Hope this helps!! :)
